Curried Tomato and Mango

Delicious, juicy, sweet, and lightly spicy.

I found the idea to sprinkle curry powder over tomato and mango on a French non-raw blog. 

Then I invented this recipe around this idea, adding a vinaigrette and fresh basil.

Tangy Green Smoothie

Just made this sweet and fruity green smoothie.

It was very filling and delicious!

Irresistable Raw Soup

This is my favorite raw soup. It’s surprisingly thick and creamy, so full of flavor.

This is my ultimate comfort food, and it’s absolutely irresistible. This is a great soup to eat when you’re craving something warm.

In the photo I garnished the soup with chopped white button mushrooms, a dollop of chickenwithagun’s herby cashew cream cheese and green onions.

On the side, I put some organic granny smith apples and kale leaves.

Curry Lentil Salad

Most raw foodists are asked “How do we get our protein?”

Well here is an easy raw recipe with 9g of raw delicious Indian spiced protein. :-)

I recommend doubling the recipe if you have enough room to sprout a full cup of lentils!

I sprouted my lentils for less than 2 days for this particular recipe. You can choose to sprout a little longer depending on your preference.

If you do not have a mandolin, finely chop your zucchini and carrots into small strips (See picture for reference).

Pesto Tomatoes

A yummy appetizer/finger food.

You won’t believe there’s not cheese in it.

The addition of the spinach is to “cut” the basil and keep the cost down.It will be just as healthy (or healthier) and the strong basil flavor will still come through.

Add some pine nuts into the processor to make deluxe version.

Thai Spring Wraps

Tastes almost like Padd Thai in a wrap.

Fresh, crisp flavors.

Kelp noodles look like rice noodles. They’re perfect for this. If you can’t find them, you can use bean sprouts or radish sprouts.

There are lots of substitutions and variations of ingredients you can use depending on what you have on hand.

You can use carrot toothpicks instead of red bell. I’ve used cucumber toothpicks instead of bean sprouts. Simply make some thin slices of cuke, stack them, and make a series of cuts in parallel from one side to the other and you’ve got toothpicks!

Beetroot Orange & Black Grape salad

Ready in a heartbeet! Hur hur, well, not really. About 20 minutes.

The beautiful hot-pink pops of color are achieved by leaving a good part of the white pith on the orange--it soaks up the pink!

The pith is very high in vitamin C, and also helps stimulate white blood cells. Great for anyone who bleeds easily.

The garlic may sound a little strange but it gives it a spicy kick. I’d like to hear if anyone else enjoys this as much as I did. Thanks!

Swiss Chard Apple and Cherry Salad

A tasty way to use chard!

It needs to marinate for about 20 min in order to lose the abrasive-chard taste and take on the sweet-tangy taste.

Really delicious! Lots of vitamin C, A, K and iron!

Almond Cherry Chocolate Ice Cream

Yummy variation of many raw choco ice cream recipes out there.

For me, the dried sweet cherries and almonds rounded it off. It's pretty simple to make. You just need the patience for it to freeze.

No ice-cream maker needed, though I’m sure if you have one, it will work even better. I also read that cooling it in the fridge for the first hour helps the ‘creaminess’.

I can’t find young coconuts here in Peru, just the brown ones, which worked fine.
