Ingredients
- 2 1/2 cups dried shredded coconut
- 3/4 cup coconut oil (liquid)
- 1/2 cup maple syrup
- 1/2 cup raw cocoa powder
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
Recipe Directions
- 1. Add all ingredients into large bowl except the shredded coconut.
- 2. Stir with spoon until well mixed.
- 3. Once combined, add shredded coconut. Stir again until well combined.
- 4. Form into 12 small mounds and place on plate. Refrigerate for one hour. (Haystacks will harden when cooled.)
- 5. Store leftover haystacks in refrigerator.

No equipment required! Which means less dishes to clean, which is always a good thing!
These raw chocolate haystacks are awesome. I like to store them in the fridge for quick sugar fixes. These haystacks are probably one of my top 5 favourite recipes because they are really quick and really good!
Best served cold, straight-out of the fridge because coconut oil will liquify again once warm. (Note: you can freeze them for longer storage, but they are moist and much better when refrigerated rather than frozen.)
To get the white-coconut effect as seen in the picture, roll your finished haystacks in some additional shredded coconut before freezing.

Hi Becca! Usually the consistency of the oil actually depends on the temperature - if its warm when you buy it, it's liquid :) Either is fine.

These look sooo good! I am going to try making them tomorrow. :) can I substitute coconut nectar for the maple syrup?

I've never used coconut nectar myself, but if it is similar to agave nectar/maple syrup/honey in terms of sweetness then it'll be fine, Sylvea

Hi Linnea, I have never used it and it isn't considered raw, but I am sure it would work out well if the general sweetness is similar to honey or maple syrup as a sweetener

I've been eating these for months!!! Extremely easy to make (I double the recipe each time I make them and leave the rest in the freezer). Delish!!! And I know what's in it! :) Thank you soooooo much for sharing this recipe.

Super simple and super delicious! I couldn't make nice looking haystacks, so I just pressed the mixture into a mini cupcake pan lined with colorful mini cupcake liners. It made for a great presentation and the haystacks were a hit with my family!

I started eating this before freezing too ;). I think this recipe (pre-freezing) would be amazing as chocolate syrup for ice cream or maybe some other kind of 'frosting'-like dessert drizzle :)

These are delish! I added chia seeds too. I worked out that they are about 110 kcal each does that sound about right?

Definitely John! Sometimes I buy luxurious home made raw chocolate at a farmer's market in Halifax Nova Scotia. Is it very good, but not so nice on the pocket book! Plus, it's nice to be able to make it yourself when the craving hits, right? :)
