Ingredients
1 cup sea beans
1 jicama, sliced into matchsticks
2 organic apples-favorite, sliced into matchsticks
4 tablespoon Organic cold pressed Olive oil
1 tablespoon lemon juice
black pepper to taste
Recipe Directions
prepare your sea beans, jicama and apples. The prepare the next 3 ingredients for the dressing. Toss. This would also work well with a nut cheeze to complete the meal.

By lzhptI like to snack on these after a long run and never knew quite what to do with them. I can only find them at Whole foods in the mushroom section. They are green squiggles. Found this recipe on Melissa’s organic food Website and tried it. It’s really different and yummy if you’re craving a salty crunchy meal. The Sea bean is also called Salicornia.

For the first time in as long as I can remember I had no idea what an ingredient in a recipe was. I had to do a search on sea beans and this is what I found (in the event anyone else out there doesn't know what a sea bean is). I look forward to trying this. Never saw them at my Whole Foods in NY but I will double check again this weekend incase I just overlooked them! Thank you Izhpt!

Not in your WF mushroom section? Strange place for them and i think they can set you back about $10/pound, but they are light--you don't need much--1C would likely be about .3 pound. Guessing. I'm really interested to know what others think. I enjoyed the variety. You can also get them online. melissas

Bought a whole bunch more at WF tonight about $5 for 4 salads worth. Pics a little crooked, but a nice cinco de mayo meal.
