This turned out so pretty I had to share. I love using my spiralizer for carrots because it produces such cute little curls. Since it was already out, I used it for the yellow pepper too and it worked great!

Ingredients
1 fat carrot (spiralized using noodle blade)
1 chayote with skin (spiralized using noodle blade)
1 yellow pepper (spiralized using flat blade)
1 green onion (chopped small)
Small handful of pea shoots
Recipe Directions
1. Mix everything together in a small bowl. Can be eaten as-is or mixed into a bed of greens.
