2-3 Medjool dates
1 banana
Vanilla
Recipe Directions
1. Grind macadamia nuts and coconut in a coffee grinder.
2. Mash dates with a fork.
3. Mash banana with dates.
4. Mix in the ground nuts and vanilla.

Sounds yummy, but wouldn't that be hard to mash the dates with just a fork?

Rachel, Thanks for the question. I use medjool dates that are plump and moist so it isn't too difficult to mash them. I will update this specification in the recipe.
Angie, I don't soak the dates first, and I usually just pour some vanilla in--I'm guessing 1/2 tsp. Using a vitamix sounds like a great idea to make it really creamy.
